Who can resist the gooey deliciousness of medjool dates? I sure can't. And I have absolutely no will power when it comes to banana pancakes. Give me a plate, and I will eat them, fork or not. It recently dawned on me that, oh my gosh, if I COMBINED these two wonderful things, both of which can be considered some of nature's candies because of their super intoxicating sweetness, I could create something totally, mind-blowingly brilliant. And that's what I thought of these pancakes.
I'm still kind of getting the hang of making my own recipes, but I thought these were sufficient enough to share with everyone. Many of the recipes I've used and tried are posted on my Instagram profile, but I thought it would be easier to have an organized website where I can store all kinds of nutritious recipes.
Here goes nothing!
Vegan Caramel-Banana Pancakes stuffed with Chocolate Brownie Questbar and layered with banana slices, crushed almonds, and sugar free maple syrup.
Recipe for Salted Caramel-Banana Mixture:
- 1 medjool date
- 1/2 banana
- 1 tablespoon water
- Sprinkle of sea salt
- 1/2 tablespoon flax meal
Recipes for Pancakes:
- 1/2 cup oat flour
- 1/2 teaspoon baking powder
- 1/4 cup almond milk
- Salted caramel-banana mixture
Additional toppings (optional):
- Chocolate Brownie Questbar (or protein bar of choice)
- Sugar free maple syrup
- Justin's vanilla almond butter
- Crushed almonds
- Banana slices
Directions:
- Place date, half banana, sea salt, water, and flax meal in a food processor. Pulse until smooth.
- In a small bowl, combine oat flour and baking powder.
- Add date mixture to small bowl with flour.
- Pour in milk, then mix all ingredients together.
- Add half the Questbar, if desired, to batter*
- Cook on a lightly greased pan over medium heat until pancakes are set on both sides, flipping in between.
- Serve onto a plate, and top with anything you'd like!
*Adding the Questbar will make this a NON-vegan recipe. If you'd like to keep it vegan but would still like to add a protein bar, I suggest using a Squarebar to add more protein to the pancakes.)
