Apple Pie Stuffed Mugcake

This fall weather has got me craving all sorts of wonderful food! That's probably why fall is my favorite season… Apples, pears, pumpkin, squash… You can make so many delightful things with them, from soups and salads to pies and pancakes. I'm starting out with the pie-flavored theme with this Apple Pie stuffed Mugcake! Alls you gotta do is make da mugcake batter and plop in so gooey fabulous Apple Pie Questbar chunks (which taste pretty darn close to the real deal!) Dass it!





Ingredients:
  • 1/2 cup old fashioned rolled oats, ground into a flour
  • 1/2 cup liquid egg whites
  • 2 tbsp Greek yogurt
  • 1/4 cup apple sauce (I used cinnamon flavored)
  • 1 apple pie Questbar, broken into pieces
  • 1/2 tsp baking powder
  • Sprinkle of Stevia
  • Dash of cinnamon
  • Speculoos cookie butter (optional)
Directions:
  1. In the food processor, grind the oats into a flour.
  2. Pour oat flour into a small bowl. Add in baking powder, Stevia, and cinnamon. Mix until combined.
  3. Add Greek yogurt, apple sauce, and egg whites. Stir until evenly combined.
  4. Break half the Questbar into pieces and place into bowl. Fold into batter.
  5. Lightly coat another small, microwaveable bowl with cooking spray. Transfer batter into greased bowl.
  6. Microwave in the oven for 2:15-3 minutes, or until top of mugcake is completely set. 
  7. Flip cake onto a plate and top with remaining Questbar and Speculoos cookie butter (or any other desired toppings). Enjoy!
