Banana Bread Muffins with Mini Chocolate Chips

Taking on a classic family recipe with the moist and delicious banana muffins sprinkled with mini chocolate chips. So good, you won't be able to stop yourself from popping one, two, three… maybe four… into your mouth!

Recipe makes 12 muffins.




Banana muffins fresh out of the oven. See those melty chocolate chips?! 

Ingredients:
  • 3/4 cup oat flour
  • 3 mashed ripe bananas
  • 1 (5.3oz.) container plain or vanilla Greek yogurt
  • 1/4 cup nut butter (I used cashew butter, but I'm sure any type would taste yummy!)
  • 1/4 cup liquid egg whites
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Dash of cinnamon
  • 12 tsp mini chocolate chips (1 tsp for each muffin)
  • Cooking spray
Directions:
  1. Heat oven to 350F.
  2. Combine mashed banana and plain Greek yogurt in a medium bowl. Mix well until evenly distributed.
  3. In a separate medium bowl, combine oat flour, baking powder, baking soda, and cinnamon, and whisk.
  4. Add banana and yogurt mixture to dry ingredients. Measure and add the nut butter to the same bowl. Pour in egg whites. Stir until all components are well distributed. 
  5. Lightly coat a 12-slot muffin tin with cooking spray. Scoop in batter, filling each slot as evenly as possible. Sprinkle 1 teaspoon mini chocolate chips onto each muffin. 
  6. Bake in the oven for 15-20 minutes, or until a knife/tooth pick can be poked through the center of  the muffins and removed cleanly.
  7. Let cool for about 15 minutes before removing from the tin and onto a serving plate.
