Recipe makes 12 muffins.

Ingredients:
- 3/4 cup oat flour
- 3 mashed ripe bananas
- 1 (5.3oz.) container plain or vanilla Greek yogurt
- 1/4 cup nut butter (I used cashew butter, but I'm sure any type would taste yummy!)
- 1/4 cup liquid egg whites
- 1 tsp baking powder
- 1/2 tsp baking soda
- Dash of cinnamon
- 12 tsp mini chocolate chips (1 tsp for each muffin)
- Cooking spray
Directions:
- Heat oven to 350F.
- Combine mashed banana and plain Greek yogurt in a medium bowl. Mix well until evenly distributed.
- In a separate medium bowl, combine oat flour, baking powder, baking soda, and cinnamon, and whisk.
- Add banana and yogurt mixture to dry ingredients. Measure and add the nut butter to the same bowl. Pour in egg whites. Stir until all components are well distributed.
- Lightly coat a 12-slot muffin tin with cooking spray. Scoop in batter, filling each slot as evenly as possible. Sprinkle 1 teaspoon mini chocolate chips onto each muffin.
- Bake in the oven for 15-20 minutes, or until a knife/tooth pick can be poked through the center of the muffins and removed cleanly.
- Let cool for about 15 minutes before removing from the tin and onto a serving plate.
