Healthy Chocolate Chip Cookies

Perfect for an afternoon snack, a milk-dunkin' dessert, or even paired with coffee for an on-the-go breakfast treat, these cookies make a great pick-me-up any time of the day! With all nutritious ingredients, these cookies are an indulgence you can feel good about.








Healthy Chocolate Chip Cookies:

Ingredients (makes approximately 30 small cookies):
  • 1 + 1/4 cup oat flour
  • 1 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup vegan butter (I used EarthBalance)
  • 1/2 cup Stevia
  • 3/4 cup coconut sugar
  • 1 tsp vanilla
  • 2 whole eggs
  • Chocolate chips - add to your liking (I used 1/2 cup + 2 tbsp)
Directions:
  1. Preheat oven to 375F.
  2. Combine flour, baking soda, and salt in a small bowl. Set aside.
  3. In a large mixing bowl, beat butter, Stevia, coconut sugar, and vanilla. 
  4. Add eggs one at a time to the large mixing bowl, beating well after each addition.
  5. Gradually beat the flour mixture into the mixing bowl. 
  6. Fold in chocolate chips.
  7. Lightly coat 1-2 baking pans with cooking spray.
  8. Scoop batter by rounded tablespoon (I used a mini ice cream scooper to measure out my cookies) onto the pans.
  9. Lightly press down each cookie to flatten them a bit (unless you want very round cookies!)
  10. Bake in the oven for 9-11 minutes or until golden brown at the edges. 
  11. Let cookies sit for at least 2 minutes before transferring to a plate or cooling rack. 
  12. Enjoy!
