Black bean and corn burger on a whole grain bun and topped with crinkle-cut sweet potato fries. |
Ingredients (makes 4 burgers):
- 1 (15oz) can black beans
- 1/4 cup Ians whole wheat all-natural bread crumbs
- 3 tbsp egg whites
- 1/2 cup whole kernel canned corn
- 1/2 tsp rosemary
- 1/4 tsp parsley flakes
- 1/4 tsp salt-free garlic and herb seasoning
- Crinkle-cut sweet potato fries (optional)
Directions:
- Open the can of black beans. Pour them into a strainer and rinse them.
- After rinsing, place black beans in a food processor and pulse until the majority of the beans are mashed and smooth. It's okay if there are still some whole black beans, but try to blend as many as you can.
- Transfer blended black beans into a small-medium bowl. Add in bread crumbs and mix. Add parsley, rosemary, and seasoning, then mix again until everything is well combined. Finally, add in egg whites and mix until all ingredients are evenly distributed.
- Measure out corn and pour into black bean mixture bowl. Fold corn into mixture until it is spread evenly throughout the mix.
- Form burger mixture into four even patties. Cook on a lightly greased pan or place on a grill until outside is firm.
- Place burgers onto a bun and serve with sweet potato fries. I even recommend putting the fries on the burger - the flavors go really well together!
