Chocolate Banana-Date Protein Baked Oatmeal

Despite the intimidatingly long name, this oatmeal was soft and gooey! The combination of flavors blended so well together - I think bananas and dates are becoming two of my favorite things to add to breakfast food. The apricots made it even sweeter, so naturally I had to balance it out with a blob of peanut butter!






But it wasn't just any peanut butter that I put on top. It was my brand new jar of Wild Friends Honey Pretzel Peanut Butter! This stuff is so wonderful - there are actual pretzel pieces throughout. I love pretzels, and I love peanut butter, so it was just so perfect. I've also had the cinnamon raisin flavor from this brand, and it's just as yummy (it has actual raisins in it! To die for!)


Ingredients:
  • 1/2 cup old fashioned rolled oats
  • 1 scoop chocolate whey protein powder
  • 1 mashed banana
  • 1 chopped and pitted medjool date
  • 1/4 cup egg whites
  • 1/4 cup almond milk
  • 1/4 tsp baking powder
  • 3 dried apricots, chopped
  • 1 tablespoon peanut butter
Directions:
  1. Preheat oven to 350 F.
  2. Combine all ingredients except apricots and peanut butter in a small bowl, mixing until evenly distributed.
  3. Lightly grease a small oven-safe dish or bowl with cooking spray.
  4. Transfer batter into greased dish/bowl.
  5. Bake for 15-20 minutes.
  6. Let cool for 5-10 minutes, then top with apricot pieces and peanut butter.
