Maple Banana Protein Pancakes

Let's face it: pancakes are delightful. Especially when they come out with the perfect consistency and are topped with your favorite goodies. This morning I enjoyed a stack of pancakes that fit these qualities quite well! With mashed banana and maple syrup mixed into the batter, these pancakes had a deliciously sweet taste that left me smiling while I ate. Nothing can beat the power of the pancake!





In the original recipe for these, I ended up using quinoa flour in place of oat flour… Not my best decision. I guess I was thinking that it would use up some of the quinoa flour that has been in my cupboard for a while, as well as incorporate different foods into my diet. Oh, well. Quinoa flour just might not be for pancakes. If anyone has any ideas for how I can use quinoa flour, please post in the comments below! I would really appreciate it.

Anyway, onto the pancake recipe!

Maple Banana Protein Pancakes layered with maple Greek yogurt and topped with banana slices.



Ingredients:
  • 1/3 cup + 2 tbsp oat flour
  • 1 scoop vanilla protein powder
  • 1/2 ripe banana (half mashed)
  • 1/4 cup egg whites
  • 2 tbsp plain Greek yogurt
  • 2 tbsp sugar free maple syrup
  • 1/4 tsp cinnamon
  • 1/2 tsp baking powder

Directions:
  1. Combine all ingredients in a small/medium bowl, mixing until smooth.
  2. Heat a large lightly greased pan over medium heat.
  3. Scoop batter onto pan, forming into pancakes. 
  4. Let pancakes cook on each side, flipping when one side is firm.
  5. Serve onto a plate and top with anything you'd like.
