Cinnamon Roll Raisin Cookies

Low fat.
High protein.

Oh, if you insist! As usual, I was craving something oatmeal-raisiny. I figured I hadn't had an oatmeal raisin cookie in a while, so why not try to make some?

If you're looking for a way to use some of your Questbars or treat yourself to a healthy dessert or snack, I recommend you try these! The best part is when you bite into a perfect ball of cinnamon roll Questbar, so make sure you search through the cookies to find the one filled with the most before anyone else gets to it!


Ingredients:
  • 1 cup old fashioned rolled oats, ground into a flour
  • 1 scoop vanilla protein powder
  • 1 cinnamon roll Questbar, rolled into small ball shape
  • 1 whole egg
  • 1/2 cup vanilla Greek yogurt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/3 cup raisins
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350 F.
  2. Measure out oats. Pour them into a food processor and grind until they have become a flour. Transfer flour into a medium bowl.
  3. Combine all ingredients except raisins and Questbar and mix until evenly combined.
  4. Fold in Questbar pieces, then fold in raisins.
  5. Scoop batter onto a lightly greased baking pan (recipe makes about 10 cookies).
  6. Bake in the oven for 8-10 minutes.
  7. Let cool for 5-10 minutes, then scrape off of pan and place onto a separate serving plate.
