Strawberry-Peach Nutrient Packed Smoothie

Hooray for smoothies and all the wonderful goodies they fit in! I packed in tons of healthy ingredients to make sure I got in all my proper nutrients for the day. I don't really follow of strict carbs/protein/fats ratio, but I do try to make sure I get in foods with fiber, Vitamin A/C, potassium, healthy fats, and other essential vitamins and minerals by eating fruits and veggies, whole grain foods, and plant-based fats every day. This smoothie helped me make sure I got in pretty much every one of these nutritious factors!



Probably about 90% of my recipes contain bananas. I just love the consistency they have, both when they're fresh and when they're frozen. They help thicken smoothies, add sweetness to pancakes, can be blended into "nice" cream, and so much more. But I realize that not everyone is as big a fan of bananas as I am, so I made this smoothie without any bananas, and it still tasted great! Still came out creamy and sweet, just the way I like it.

Strawberry-Peach Smoothie topped with whole grain Cheerios, diced strawberry, and goji berries.

Ingredients:
  • 1 cup unsweetened almond milk
  • 1 cup frozen strawberries
  • 1 cup frozen peaches
  • 1 chopped and pitted medjool date
  • 1 scoop vanilla protein powder
  • 1/2 cup pumpkin puree 
Toppings (optional):
  • Fresh strawberries
  • Goji berries
  • Whole grain Cheerios/cereal
Directions:
  1. Place all ingredients into a blender.
  2. Blend until smooth and creamy, making sure there are no chunks left. 
  3. Pour smoothie into a tall glass or bowl and add toppings if you'd like.
  4. Enjoy!
