Edamame and Garlic Hummus

I'm all about making new hummus flavors this summer! Although I'm kinda running out of ideas… I'll have to have a brainstorm day soon! Anyway, this recipe features a combo of edamame and garlic, which I feel have a pretty good relationship together. I still used garbanzo beans because I feel that their texture provides a nice base for the consistency of the hummus.






Whole grain pita stuffed with smoked turkey slices, spinach, and edamame-garlic hummus. 

Ingredients:
  • 1 (15 oz) can garbanzo beans
  • 1 cup edamame (not including the pods)
  • 1 + 1/2 tbsp olive oil
  • 1/4 cup tahini
  • 1/3 - 1/2  cup water
  • 1/4 tsp salt
Directions:
  1. Combine all ingredients into a food processor.
  2. Pulse until mixture is smooth and creamy, with as few chunks as possible.
  3. Scoop out of the food processor and serve.
  4. Store remaining hummus in a container and place in the fridge.
