Cookies and Creme Protein Pancakes

I LOVE cookies and creme flavored things. Especially Questbars. So I made some fabulous cookies and creme pancakes to satisfy my cookie craving! The chocolate pancakes came out so fudgey and moist, and the vanilla pancakes were just as fluffy and delightful. I could have eaten them all by themselves!


Ingredients:

Chocolate ('Cookies') batter:
  • 1/4 cup buckwheat flour
  • 1 tbsp cocoa powder
  • 1/2 scoop chocolate whey protein powder
  • 1/4 tsp baking powder
  • 3 tbsp vanilla Greek yogurt
  • 3 tbsp unsweetened vanilla almond milk
  • 1 tbsp applesauce
Vanilla ('Creme') batter:
  • 1/4 cup oat flour
  • 1/2 scoop vanilla whey protein powder
  • 1 tsp vanilla
  • 1/4 tsp baking powder
  • 1 tbsp applesauce
  • 3 tbsp vanilla Greek yogurt
  • 1 tbsp unsweetened vanilla almond milk
Additional ingredients (optional):
  • 1 Cookies and Creme Questbar
  • Sugar free maple syrup
Directions:
  1. In a small bowl, combine all chocolate batter ingredients. Stir well, until batter is smooth and there are no unmixed areas. If using Questbar, break about 1/4 of the bar up into pieces and fold them into the batter.
  2. In a separate small bowl, combine all ingredients for vanilla batter. Mix until batter is smooth and there are no unmixed areas. Take another 1/4 of the Questbar, break it into pieces, and fold it into the batter.
  3. Heat a large pan over medium heat. Lightly coat with cooking spray.
  4. Scoop chocolate batter onto pan, forming into pancake shape. Let sit on each side for about 2-3 minutes, or until the pancake feels firm. 
  5. Repeat step 4 with vanilla batter.
  6. Once pancakes are done cooking, remove them from the pan and place them on a plate. Top with additional toppings (or anything you wish) and eat up!
