Honey & Fig Hummus

During the fall, when I'm enjoying my huge splurge on pumpkin-flavored goods, one of my favorite things to make is maple-pumpkin hummus. Somehow the garbanzo beans have a slightly salty taste, which makes it a perfect partner with sweet ingredients. Now that it's summer time and figs are in season, I thought it would be a fun idea to try another sweet hummus - and thus the Honey-Fig combo was born! The sweetness of the honey and dried figs isn't super powerful, but it does come out having a mildly sweet aftertaste.


One of my favorite things to have for lunch - a turkey and hummus stuffed whole wheat pita! The honey-fig hummus went perfectly with the honey turkey I used.

Ingredients:
  • 1 (15oz) can garbanzo beans
  • 1 tbsp coconut oil
  • 2 tbsp tahini
  • 2 dried figs
  • 1/2 tbsp honey (or use agave nectar to make vegan)
  • 1/4 cup water
  • 1/4 tsp salt
Directions:
  1. Open can of garbanzo beans. Drain and rinse them in a colander.
  2. Pour rinsed beans into a food processor. Pulse on high until most of the beans are blended up.
  3. Add remaining ingredients to food processor. Pulse on high again until smooth and creamy.
  4. Scoop hummus into a container and store in the refrigerator, or serve on anything you'd like while it is super fresh!
