Simple Vanilla Mugcake with Cinnamon Roll Questbar

Sometimes I just like to make a quick and easy breakfast. That's when mugcakes swoop in the rescue! With just a few simple ingredients and under 3 minutes of microwave time, you can make this mugcake lickety-split - and still have time to top it off with lots of goodies!







Ingredients:
  • 1/2 cup old-fashioned rolled oats, ground into a flour
  • 1/2 cup liquid egg whites
  • 1/4 cup + 2 tbsp vanilla Greek yogurt
  • 1/2 tsp baking powder
  • Dash of cinnamon
  • 1 cinnamon roll Questbar, broken into pieces
Additional Toppings (optional):
  • Snickerdoodle BuffBake almond butter
  • Whole almonds
Directions:
  1. Measure out the oats. Pour them into a food processor and grind them into a flour.
  2. Transfer oat flour into a small bowl. Add in egg whites, Greek yogurt, cinnamon, and baking powder. Stir until ingredients are well combined, making sure there are no clumps in the mixture.
  3. Break up the Questbar and fold the pieces into the mugcake batter.
  4. Lightly grease another small, microwave-safe bowl or mug with cooking spray. Pour the mugcake batter into the greased bowl. 
  5. Microwave for 2:30-2:45 minutes, or until center is fully cooked (can poke a toothpick through cleanly).
  6. Let the bowl cool for a minute or so, then flip it upside down over a plate to remove the mugcake (the bowl may still be a bit hot, so be careful!)
  7. Top with almond butter and sprinkle with almonds (or add other toppings of choice) and enjoy!
