Ingredients:
- 1/2 cup old-fashioned rolled oats, ground into a flour
- 1/2 cup liquid egg whites
- 1/4 cup + 2 tbsp vanilla Greek yogurt
- 1/2 tsp baking powder
- Dash of cinnamon
- 1 cinnamon roll Questbar, broken into pieces
Additional Toppings (optional):
- Snickerdoodle BuffBake almond butter
- Whole almonds
Directions:
- Measure out the oats. Pour them into a food processor and grind them into a flour.
- Transfer oat flour into a small bowl. Add in egg whites, Greek yogurt, cinnamon, and baking powder. Stir until ingredients are well combined, making sure there are no clumps in the mixture.
- Break up the Questbar and fold the pieces into the mugcake batter.
- Lightly grease another small, microwave-safe bowl or mug with cooking spray. Pour the mugcake batter into the greased bowl.
- Microwave for 2:30-2:45 minutes, or until center is fully cooked (can poke a toothpick through cleanly).
- Let the bowl cool for a minute or so, then flip it upside down over a plate to remove the mugcake (the bowl may still be a bit hot, so be careful!)
- Top with almond butter and sprinkle with almonds (or add other toppings of choice) and enjoy!
