Healthy Chocolate Chip Cookies:
Ingredients (makes approximately 30 small cookies):
- 1 + 1/4 cup oat flour
- 1 cup all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 cup vegan butter (I used EarthBalance)
- 1/2 cup Stevia
- 3/4 cup coconut sugar
- 1 tsp vanilla
- 2 whole eggs
- Chocolate chips - add to your liking (I used 1/2 cup + 2 tbsp)
Directions:
- Preheat oven to 375F.
- Combine flour, baking soda, and salt in a small bowl. Set aside.
- In a large mixing bowl, beat butter, Stevia, coconut sugar, and vanilla.
- Add eggs one at a time to the large mixing bowl, beating well after each addition.
- Gradually beat the flour mixture into the mixing bowl.
- Fold in chocolate chips.
- Lightly coat 1-2 baking pans with cooking spray.
- Scoop batter by rounded tablespoon (I used a mini ice cream scooper to measure out my cookies) onto the pans.
- Lightly press down each cookie to flatten them a bit (unless you want very round cookies!)
- Bake in the oven for 9-11 minutes or until golden brown at the edges.
- Let cookies sit for at least 2 minutes before transferring to a plate or cooling rack.
