Chocolate Brownie Chunk Banana Muffins

Muffins are just the best. They're like cupcakes. Actually, what is the difference between a muffin and a cupcake? Isn't a cupcake just cake in muffin form? So technically a muffin is a category of sorts, and cupcakes fall within it. Kind of like how a square is a rectangle, but a rectangle is not a square. A cupcake is a muffin, but a muffin is not a cupcake. Am I making sense? I don't think I am. Oh, well. All I know for sure is that these muffins are GEWD and you should bake some!

Using a chickpea base, I added in peanut butter, dates, coconut sugar, and other sweet ingredients to boost the flavor. One of my best cookie recipes yet!

Edamame and Garlic Hummus

I'm all about making new hummus flavors this summer! Although I'm kinda running out of ideas… I'll have to have a brainstorm day soon! Anyway, this recipe features a combo of edamame and garlic, which I feel have a pretty good relationship together. I still used garbanzo beans because I feel that their texture provides a nice base for the consistency of the hummus.

Honey & Fig Hummus

During the fall, when I'm enjoying my huge splurge on pumpkin-flavored goods, one of my favorite things to make is maple-pumpkin hummus. Somehow the garbanzo beans have a slightly salty taste, which makes it a perfect partner with sweet ingredients. Now that it's summer time and figs are in season, I thought it would be a fun idea to try another sweet hummus - and thus the Honey-Fig combo was born! The sweetness of the honey and dried figs isn't super powerful, but it does come out having a mildly sweet aftertaste.

White Bean and Balsamic Hummus

Hummus is without a doubt one of my favorite things to put on sandwiches, plop in wraps, or dip veggies and pita bread in. Sometimes I can actually just lick it off a spoon; it almosts taste like mashed potatoes! Which leads me to believe that hummus is on the verge of becoming a new comfort food.
