When I was in elementary school, one of the popular lunches to buy was the Mexican pizza. Obviously, I don't know what ingredients went into the crust, or what the small, round balls of meat were on top, but it sure did taste good! So this made me remember the old times of me being super picky and hardly eating anything beyond chocolate and bread (oh, to be a kid again!)
I had some leftover ground turkey in the fridge from the turkey taco wraps I had a few nights ago, so I figured I'd try to use it up. The slightly spicy seasoning went perfectly with the cheesy-chickpea flavor of the pizza!
Ingredients:
Cheesy Chickpea crust (vegan and gluten free):
- 2/3 cup chickpea flour
- 1/2 cup water
- 1 tbsp nutritional yeast
- Sprinkle of salt
Toppings:
- 1/3 cup tomato sauce
- Mexican-style ground turkey*
*To make ground turkey mix: cook 1 pound 99% fat free ground turkey on a skillet; mix cooked turkey with enough tomato sauce to moisten the meat a bit. Add half a pack of mild Mexican seasoning to mixture and stir.

- Preheat oven to 400 F (or 200 C).
- Combine all ingredients for chickpea flour in a small/medium bowl and mix together until batter is smooth.
- Heat a cooking pan over medium-low heat and coat with 1 tsp olive oil.
- Pour crust batter onto pan, cooking like a pancake, until both sides are set.
- Place crust onto a baking sheet, then top with sauce and ground turkey (or desired toppings).
- Bake in the oven for 6 minutes.
- Remove and let cool for 5-10 minutes before serving and eating.
