Ingredients:
- 1/2 cup egg whites
- 3 frozen bananas, microwaved for 1-2 minutes to thaw
- 1 scoop chocolate whey protein powder
- 1/2 cup milk of choice
- 1 Double Chocolate Chunk Questbar, formed into small balls*
- 1/3 - 1/2 cup caissons
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup oat flour
- 1/2 cup whole wheat flour
- 1 tbsp stevia
*It may be easier to form Questbars into ball shape if you microwave the bar for about 10 seconds to soften it.
Directions:
- Preheat oven to 350 F.
- Mix all ingredients except Questbar and craisins until batter is smooth.
- Fold in craisins, then fold in Questbar chunks.
- Lightly grease a cupcake/muffin tin. Pour batter into tin (recipes should make about 10-12 muffins).
- Bake in oven for 20 minutes.
- Let cool for about 10 minutes before removing muffins from pan.
