Chocolate Chunk and Craisin Muffins

A healthy twist on one of my favorite things: chocolate chip muffins. Whilst plotting for my next Questbar creation (I have trouble eating them plain - they just feel too important not to put  in something special, like pancakes or a mugcake... or MUFFINS), I had a childhood flashback of baking delicious chocolate chip banana muffins, enjoying the melty chocolate as I took a bite just after they came out of the oven. Here's to all my fellow chocoholics (and Questbar addicts)!





Ingredients:
  • 1/2 cup egg whites
  • 3 frozen bananas, microwaved for 1-2 minutes to thaw
  • 1 scoop chocolate whey protein powder
  • 1/2 cup milk of choice
  • 1 Double Chocolate Chunk Questbar, formed into small balls*
  • 1/3 - 1/2 cup caissons
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup oat flour
  • 1/2 cup whole wheat flour
  • 1 tbsp stevia
*It may be easier to form Questbars into ball shape if you microwave the bar for about 10 seconds to soften it.

Directions:
  1. Preheat oven to 350 F.
  2. Mix all ingredients except Questbar and craisins until batter is smooth.
  3. Fold in craisins, then fold in Questbar chunks.
  4. Lightly grease a cupcake/muffin tin. Pour batter into tin (recipes should make about 10-12 muffins).
  5. Bake in oven for 20 minutes.
  6. Let cool for about 10 minutes before removing muffins from pan.
