Chocolate Chip Cookie Dough Spread

Let's face it - if you love baking, there has been at least one time when you've gorged yourself on raw cookie dough. It tastes so wonderful, just scooping it out of the bowl, all creamy and soft. Sadly, it's not the healthiest thing to do. For one, if you use ingredients such as eggs, you might get sick from eating them raw. Also, it's pretty hard to stop! So I've created a healthy, single serving recipe that'll help you indulge in your cookie dough cravings, but still keep ya under control.




Sliced banana and chocolate chip cookie dough nestled in a P28 high protein flatbread.

Ingredients:
  • 1/2 cup chickpeas (cooked and rinsed)
  • 1 tsp vanilla
  • 1 medjool date, chopped
  • Sprinkle of salt
  • Pinch of Stevia
  • 1/2 - 1 tbsp chocolate chips (I used Enjoy Life brand)
Directions:

  1. Combine all ingredients EXCEPT for chocolate chips in a food processor and pulse until mixture is well blended and mostly creamy (it's all right if there are still some date chunks left)
  2. Remove cookie dough from food processor and spread on anything you'd like. Top with chocolate chips, or mix chocolate chips into batter before spreading.
