Ever since I first made these pancakes, I have had a severe pancake obsession. They have become my absolute favorite thing to eat for breakfast (and sometimes lunch or dinner!) Using this particular recipe, I have made so many different combinations, stuffing them and topping them with all kinds of delicious goodies. I've included a gallery of sorts showing all the yummy things I've made with this recipe!

Ingredients for Pancakes:
- 2 tbsp whole wheat flour
- 2 tbsp oat flour
- 1 scoop vanilla or chocolate protein powder
- 1/4 cup pumpkin puree
- 1/4 cup egg whites
- 1/2 tsp baking powder
- Dash of cinnamon
- Dash of pumpkin pie spice
Ingredients for Salted Caramel Sauce*:
- 2 chopped and pitted medjool dates
- 1/2 tbsp flax meal
- 2 tbsp water
- Dash of maple syrup
- Sprinkle of sea salt
Directions for Pancakes:
- Combine all ingredients in a bowl and mix until batter is smooth. It will be thick!
- Heat a pan over medium heat. Coat with cooking spray.
- Scoop pancake batter onto pan, forming into about 4 pancakes. Cook until bottom is set, then flip and let cook until the center is firm and doesn't slide around.
- Remove pancakes from the pan and plop onto a plate. Top with anything you'd like!
Directions for Salted Caramel Sauce:
- Place all ingredients into a food processor.
- Blend on high until smooth.
- Scoop out of food processor and place on top of pancakes.
