Ingredients:
- 2/3 cup old-fashioned rolled oats
- 1/3 cup pumpkin puree*
- 1/2 ripe banana
- 1/3 cup (or until desired consistency) unsweetened vanilla almond milk (or milk of choice)
- 1 tbsp cocoa powder*
Additional toppings (optional):
- Chocolate Chip BuffBake peanut butter
- Banana coins
- Chocolate Coated Coconut Squarebar chunks
Directions:
- Add all ingredients into a small-medium microwave-safe bowl and mix until evenly distributed (you may need to mash the banana up a bit as you mix).
- Microwave for 45 seconds, stir, then microwave again for 30-45 more seconds.
- Top with peanut butter, banana, and Squarebars.
*Note: If you don't have any pumpkin puree or would prefer to make the oats without it, use a whole banana instead of half in order to keep the oatmeal from becoming too dry. Also, you may omit the cocoa powder if you'd like.
