Cocoa-banana-pumpkin ("classic")
Oatmeal has become a staple meal in my house; breakfast, lunch, dinner, or dessert, oatmeal is always a viable option. There are just so many different ways you can enjoy it, and so many different combinations to love. I may not always be the most creative recipe-maker, but I do know how to make a simple meal into a fun one! The key? ADD SOME GOOD TOPPINGS. It'll change your life. Believe me.

Chocolate Brownie Chunk Banana Muffins
Muffins are just the best. They're like cupcakes. Actually, what is the difference between a muffin and a cupcake? Isn't a cupcake just cake in muffin form? So technically a muffin is a category of sorts, and cupcakes fall within it. Kind of like how a square is a rectangle, but a rectangle is not a square. A cupcake is a muffin, but a muffin is not a cupcake. Am I making sense? I don't think I am. Oh, well. Vegan Cocoa Banana Donuts
I'm always searching for a healthier way to enjoy typically unhealthy foods. This morning, I attempted healthy donuts! Some of the past donut recipes I've tried have come out too dry, but these came out nice and moist. I was too impatient to eat them to let them cool properly, so they fell apart a bit during the transition from the donut mold to my plate, but luckily I topped them with so many goodies that you can't really notice!

Vegan Chocolate-Pumpkin Pancakes
The number of combinations you can create with pancakes is incredible. But one of the best combos is definitely chocolate and pumpkin. Especially during fall.
So here it is. The ultimate combination:
Chocolate. Pumpkin. United in a pancake.
So yum.
With the addition of chopped Cocoa Crunch Squarbar bites and gooey medjool date bits, this is undoubtably one of my favorite recipes to 'date' (Did you catch my pun?!). I hope you enjoy!

Cinnamon Roll Crepes
I was craving cinnamon rolls the other day (honestly, when I am I NOT craving cinnamon rolls?), so I decided to create my own version of them, the healthy way! They came out quite delish! Fluffy, filling, and flavorful - I've hit the cinnamon roll trifecta! Filled with a maple yogurt creme and topped with Rawmio Almond Silk (100% VEGAN!) and sugar-free maple syrup, there is no way you can go wrong with this breakfast.

This fall weather has got me craving all sorts of wonderful food! That's probably why fall is my favorite season… Apples, pears, pumpkin, squash… You can make so many delightful things with them, from soups and salads to pies and pancakes. I'm starting out with the pie-flavored theme with this Apple Pie stuffed Mugcake! Alls you gotta do is make da mugcake batter and plop in so gooey fabulous Apple Pie Questbar chunks (which taste pretty darn close to the real deal!) Dass it!

Healthy Banana Bread Muffins
These literally make me sooo happy. When I was younger, I absolutely LOVED my mom's banana bread. I would probably eat an entire loaf in about three days. But now that I've dedicated myself to a healthier lifestyle, I've realized that there are better ways to enjoy the same foods, but with healthier ingredients. So I did a remake of the recipe my mom usually makes, and they came out wonderfully! They taste pretty darn close to the original, but without any overwhelming amounts of sugar (like the original may or may not have had..!)

Peanut Butter Marshmallow Mugcake
Sorry it's been so long since I've posted! The cooking/baking inspiration hasn't hit very often as of late. But over the weekend, I wrote up a bunch of recipe ideas, so hopefully I will be sharing more this week!
This mugcake was so thick and yummy. It has a slight peanut-buttery flavor thanks to the protein powder and peanut butter added to the batter, and a soft inside consistency. I love how easy it is to make mugcakes! Just whip together the ingredients and pop in the microwave for a couple of minutes.

Chocolate and Peanut Butter Pancake Explosion (And Margo!)
Oh. My. Gosh. These pancakes were HEAVEN! Super fudgey delicious chocolate pancakes alternated with the peanut buttery-goodness of the PB pancakes… It's amazing what these two flavors can do to your taste buds when combined. To make the chocolate-peanut butter combo even more intense, I crumbled up a Quest Cravings peanut butter cup, drizzled with PB sauce, and layered with chocolate Greek yogurt. Flipping GOOD stuff right here!

PB Marshmallow & Pumpkin Protein Pancakes
I have been trying to create tons of new things with the new PB Marshmallow protein powder I got a few days ago. I figured it was about time that I made some pancakes with it! With the addition of pumpkin, I added more than just protein to the batter. It's always fun finding out ways to incorporate veggies and plant products into breakfast foods like mugcakes and pancakes. It just means you never have to feel bad about eating them!

Peanut Butter Buckwheat Pancakes
I was really starting to crave something sweet n' salty. Then I figured, since it's Sunday and all, and people seem to like having pancakes on Sundays (really, I'm up for them any day, but I thought I'd just go with the flow for a bit), and so I made these pancakes. They were delicious! So moist and fluffy and thick and flavorful! In all honesty, they didn't have a super peanut buttery taste to me, but I will definitely work more on that. I just wanted to share the recipe because they still tasted and came out great!
