Roasted Butternut Squash, Nut, and Cranberry Quinoa Salad

Hey, all! So sorry for the huge gap between posts - I have been majorly busy with schoolwork this past month, so I haven't had much time to squeeze in new recipes; however, I would like to introduce to you a lovely fall-themed side dish containing some of my favorite fall ingredients (besides pumpkin) - squash and cranberries. This will make an excellent feature on your table this coming Thanksgiving (I know it will most certainly be making an appearance on mine)!

Sweet Potato Pasta

Sometimes things don't work out the way you want them to, but… You just gotta push on and find the positives! That's kind of what I had to do with this meal. I really meant to make this a yummy, cheesy, healthy Mac n' Cheese, but it didn't turn out quite as creamy or cheesy as I'd anticipated. Despite this set back, it really was a tasty dish! Even though it didn't satisfy my Mac n' Cheese craving, I definitely liked it enough to make it again, which is why I'm choosing to share the recipe with you all!

Rainbow Bulgar Veggie Bowl

One of my favorite things to make for dinner, especially when I can't decide what I want, is to just mix together tons of my favorite ingredients! Tonight I made a yummy bulgar salad filled with all kinds of delicious and nutritious goodies. It sure did hit the spot! And it's super easy to make, so when you come home after a long day, you don't have to slave for an hour to make a healthy meal. This salad is finished in just 20-30 minutes. It sounds a little long, but there's lots of prep you can do while the bulgar is a'cookin'!

Black Bean and Corn Veggie Burgers

Nothing beats having a delicious burger on a summer night. I'm not a huge fan of hamburgers, but I do like chicken, turkey, and black bean burgers! So tonight I decided to make up my own recipe for a healthier alternative to a summer favorite. Not only do these have lots of plant-based protein, they are also low in fat. Clocking in around 170 calories, they're also sure to save you from the calorie-dense hamburgers, but leave you feeling just as full!  There is no longer a need to miss the average hamburger and French fries.
