Vegan Chocolate-Pumpkin Pancakes
The number of combinations you can create with pancakes is incredible. But one of the best combos is definitely chocolate and pumpkin. Especially during fall.
So here it is. The ultimate combination:
Chocolate. Pumpkin. United in a pancake.
So yum.
With the addition of chopped Cocoa Crunch Squarbar bites and gooey medjool date bits, this is undoubtably one of my favorite recipes to 'date' (Did you catch my pun?!). I hope you enjoy!

Hey, all! So sorry for the huge gap between posts - I have been majorly busy with schoolwork this past month, so I haven't had much time to squeeze in new recipes; however, I would like to introduce to you a lovely fall-themed side dish containing some of my favorite fall ingredients (besides pumpkin) - squash and cranberries. This will make an excellent feature on your table this coming Thanksgiving (I know it will most certainly be making an appearance on mine)!

Edamame and Garlic Hummus
I'm all about making new hummus flavors this summer! Although I'm kinda running out of ideas… I'll have to have a brainstorm day soon! Anyway, this recipe features a combo of edamame and garlic, which I feel have a pretty good relationship together. I still used garbanzo beans because I feel that their texture provides a nice base for the consistency of the hummus.

Sweet Potato Pasta
Sometimes things don't work out the way you want them to, but… You just gotta push on and find the positives! That's kind of what I had to do with this meal. I really meant to make this a yummy, cheesy, healthy Mac n' Cheese, but it didn't turn out quite as creamy or cheesy as I'd anticipated. Despite this set back, it really was a tasty dish! Even though it didn't satisfy my Mac n' Cheese craving, I definitely liked it enough to make it again, which is why I'm choosing to share the recipe with you all!

Three Ingredient Falafels
Last year, my family and I took a trip to Washington, D.C. and stayed in a hotel in Bethesda, Maryland. While we were there, we found this amazing Greek restaurant called "Cava Mezze Grille." We became addicted to their food, and ended up eating there every night despite the fact that there were hundreds of other restaurants around us! Ever since then, I have been in love with falafels and pitas… They are so simple, yet so delicious and healthy. I hope you enjoy my very own recipe!

Fudgey Black Bean Protein Brownies
I'm always up for finding a healthier alternative to desserts! And it just so happens that gooey, fudgey brownies are one of my favorite desserts, so… I made a delicious batch this afternoon! I never really have much to do during the day on Mondays in the summer, so I dedicated today to baking and watching Margo. Both have kept me pretty busy (the latter being the most time-consuming, as expected!) Oh, and did I mention that they're vegan?!

Rainbow Bulgar Veggie Bowl
One of my favorite things to make for dinner, especially when I can't decide what I want, is to just mix together tons of my favorite ingredients! Tonight I made a yummy bulgar salad filled with all kinds of delicious and nutritious goodies. It sure did hit the spot! And it's super easy to make, so when you come home after a long day, you don't have to slave for an hour to make a healthy meal. This salad is finished in just 20-30 minutes. It sounds a little long, but there's lots of prep you can do while the bulgar is a'cookin'!

Vegan Caramel-Banana Pancakes
Who can resist the gooey deliciousness of medjool dates? I sure can't. And I have absolutely no will power when it comes to banana pancakes. Give me a plate, and I will eat them, fork or not. It recently dawned on me that, oh my gosh, if I COMBINED these two wonderful things, both of which can be considered some of nature's candies because of their super intoxicating sweetness, I could create something totally, mind-blowingly brilliant. And that's what I thought of these pancakes.
