Chocolate Brownie Chunk Banana Muffins

Muffins are just the best. They're like cupcakes. Actually, what is the difference between a muffin and a cupcake? Isn't a cupcake just cake in muffin form? So technically a muffin is a category of sorts, and cupcakes fall within it. Kind of like how a square is a rectangle, but a rectangle is not a square. A cupcake is a muffin, but a muffin is not a cupcake. Am I making sense? I don't think I am. Oh, well. All I know for sure is that these muffins are GEWD and you should bake some!

Chocolate & Coconut Protein Cake Squares

Just as I predicted, these cake squares came out a huge success! I mean, how could they not?! Filled with Rawmio chocolate crunch spread, mashed banana, pumpkin puree, chocolate protein powder, coconut palm sugar (can we please take a moment and comment on how wonderful this stuff smells??) and many other healthy ingredients, this treat is sure to satisfy every one of your sweet tooth cravings!

Vegan Chocolate-Pumpkin Pancakes

The number of combinations you can create with pancakes is incredible. But one of the best combos is definitely chocolate and pumpkin. Especially during fall.
So here it is. The ultimate combination:
Chocolate. Pumpkin. United in a pancake.
So yum.
With the addition of chopped Cocoa Crunch Squarbar bites and gooey medjool date bits, this is undoubtably one of my favorite recipes to 'date' (Did you catch my pun?!). I hope you enjoy!

Hey, all! So sorry for the huge gap between posts - I have been majorly busy with schoolwork this past month, so I haven't had much time to squeeze in new recipes; however, I would like to introduce to you a lovely fall-themed side dish containing some of my favorite fall ingredients (besides pumpkin) - squash and cranberries. Cinnamon Roll Crepes

I was craving cinnamon rolls the other day (honestly, when I am I NOT craving cinnamon rolls?), so I decided to create my own version of them, the healthy way! They came out quite delish! Fluffy, filling, and flavorful - I've hit the cinnamon roll trifecta! Filled with a maple yogurt creme and topped with Rawmio Almond Silk (100% VEGAN!) and sugar-free maple syrup, there is no way you can go wrong with this breakfast.

Apple Pie Stuffed Mugcake

This fall weather has got me craving all sorts of wonderful food! That's probably why fall is my favorite season… Apples, pears, pumpkin, squash… You can make so many delightful things with them, from soups and salads to pies and pancakes. I'm starting out with the pie-flavored theme with this Apple Pie stuffed Mugcake! Alls you gotta do is make da mugcake batter and plop in so gooey fabulous Apple Pie Questbar chunks (which taste pretty darn close to the real deal!) Dass it!

Caramel Pumpkin Chocolate Chip Pancakes

 I just can't seem to stop making pancake recipes! They're just too fun to make... and eat! Today I concocted this splendiferous pancake stack using some of the best fall flavors around: caramel and pumpkin. Together, caramel and pumpkin create an outstanding taste, especially in these here flapjacks. Added some more fabulous and healthy ingredients (including flax meal for good fats and oat flour for whole grains), sprinkled in some mini chocolate chips, and smothered with toppings to make the perfect Sunday morning breakfast. I hope you all enjoy these as much as I just did!

Chocolate-Pumpkin Buckwheat Protein Pancakes

There's nothing like that chocolate and pumpkin combination (except maybe chocolate and peanut butter, but still), which is why I just had to make some chocolate-pumpkin pancakes for breakfast! They are super moist and fluffy, just the way I like 'em. Top them with some banana slices and nut butter, and you've got yourself one fantastic meal.

Cookies and Creme Protein Pancakes

I LOVE cookies and creme flavored things. Especially Questbars. So I made some fabulous cookies and creme pancakes to satisfy my cookie craving! The chocolate pancakes came out so fudgey and moist, and the vanilla pancakes were just as fluffy and delightful. I could have eaten them all by themselves!

Healthy Banana Bread Muffins

These literally make me sooo happy. When I was younger, I absolutely LOVED my mom's banana bread. I would probably eat an entire loaf in about three days. But now that I've dedicated myself to a healthier lifestyle, I've realized that there are better ways to enjoy the same foods, but with healthier ingredients. So I did a remake of the recipe my mom usually makes, and they came out wonderfully! They taste pretty darn close to the original, but without any overwhelming amounts of sugar (like the original may or may not have had..!)

Peanut Butter Marshmallow Mugcake

Sorry it's been so long since I've posted! The cooking/baking inspiration hasn't hit very often as of late. But over the weekend, I wrote up a bunch of recipe ideas, so hopefully I will be sharing more this week!
This mugcake was so thick and yummy. It has a slight peanut-buttery flavor thanks to the protein powder and peanut butter added to the batter, and a soft inside consistency. I love how easy it is to make mugcakes! Just whip together the ingredients and pop in the microwave for a couple of minutes.

Three Ingredient Falafels

Last year, my family and I took a trip to Washington, D.C. and stayed in a hotel in Bethesda, Maryland. While we were there, we found this amazing Greek restaurant called "Cava Mezze Grille." We became addicted to their food, and ended up eating there every night despite the fact that there were hundreds of other restaurants around us! Ever since then, I have been in love with falafels and pitas… They are so simple, yet so delicious and healthy. I hope you enjoy my very own recipe!

Ever since I first made these pancakes, I have had a severe pancake obsession. They have become my absolute favorite thing to eat for breakfast (and sometimes lunch or dinner!) Using this particular recipe, I have made so many different combinations, stuffing them and topping them with all kinds of delicious goodies. Chocolate and Peanut Butter Pancake Explosion (And Margo!)

Oh. My. Gosh. These pancakes were HEAVEN! Super fudgey delicious chocolate pancakes alternated with the peanut buttery-goodness of the PB pancakes… It's amazing what these two flavors can do to your taste buds when combined. To make the chocolate-peanut butter combo even more intense, I crumbled up a Quest Cravings peanut butter cup, drizzled with PB sauce, and layered with chocolate Greek yogurt. Flipping GOOD stuff right here!

Rainbow Bulgar Veggie Bowl

One of my favorite things to make for dinner, especially when I can't decide what I want, is to just mix together tons of my favorite ingredients! Tonight I made a yummy bulgar salad filled with all kinds of delicious and nutritious goodies. It sure did hit the spot! And it's super easy to make, so when you come home after a long day, you don't have to slave for an hour to make a healthy meal. This salad is finished in just 20-30 minutes. It sounds a little long, but there's lots of prep you can do while the bulgar is a'cookin'!

Chocolate Chunk and Craisin Muffins

A healthy twist on one of my favorite things: chocolate chip muffins. Whilst plotting for my next Questbar creation (I have trouble eating them plain - they just feel too important not to put  in something special, like pancakes or a mugcake... or MUFFINS), I had a childhood flashback of baking delicious chocolate chip banana muffins, enjoying the melty chocolate as I took a bite just after they came out of the oven. Vegan Caramel-Banana Pancakes


Who can resist the gooey deliciousness of medjool dates? I sure can't. And I have absolutely no will power when it comes to banana pancakes. Give me a plate, and I will eat them, fork or not. It recently dawned on me that, oh my gosh, if I COMBINED these two wonderful things, both of which can be considered some of nature's candies because of their super intoxicating sweetness, I could create something totally, mind-blowingly brilliant. And that's what I thought of these pancakes.
